Coffee Cherries are pulped and fermented for 18 to 24 hours. After the fermentation process, beans are washed, wet milled & dried on patios for approximately 15 days. Finally, the beans are dried for a short time in a mechanical dryer, to ensure consistency.
Asociación de Mujeres Caficultoras del Departamento del Cauca is a association of women focused on gender equality, located in the department of Cauca. The association includes 274 women, every lady is the head of their household, 15% of these members are indigenous with an average age of 40 years old.
A favourite amongst us in the roastery, this well balanced coffee cuts through milk to sweeten, aswell as hold it’s own as a fruity espresso!
